Bloaters and kippers are both smoked herring, only a bloater is smoked whole, with its innards intact, whereas a kipper is filleted before smoking. There is a great difference in taste with the bloater having a more intense gamey flavour. Try bloater paste on a baked potato with cherry tomatoes and red onion—a perfect spring lunch!
